I want to talk about avocados. Have I talked about them before? Probably. They are amazing. Like a piece of heaven, wrapped into a nice green shell… or something like that. To the peeps who say to stay away from Avo’s because they are high in fat, I say, “live a little… besides, you’re only hurting yourself”.
“Most of the fat in an avocado is monounsaturated — the “good” kind that actually lowers cholesterol levels”. (http://www.webmd.com/diet/features/avocado-advantage). I’m sure you’ve heard me say it before, and it won’t be the last time, but… everything in moderation. Wow, I’ve been married a week and I’ve already turned into my mother. Funny how that works.
Here is a little recipe adapted from Oh She Glows. It is avocado pasta…and it’s delicious. To all you avo haters – deal with it.
SO, choose the pasta of your choice and set your water to boil…just like you would any other pasta dish; nothing new here.
Prepare your Avocados! Open ‘em up and mash them REAL good. The more avocados, the creamier it will be. I use about one per person.
– Add about a tablespoon of lemon juice.
– Teaspoon of garlic and a teaspoon of onion powder. This is really something you need to taste as you go. Some people like a lot; I personally like a little. Whatever floats your boat. Basically, do what you would for guacamole and then add water to make it more of a sauce.
– When your pasta is ready, add the sauce and maybe even some Parmesan cheese, if you are into that.
It’s a SUPER easy recipe… but most people never think of making a guacamole sauce to add to their pasta. Believe me, it’s delicious. Try it. Feed it to the kids, the boyfriend, the girlfriend…the cat, the dog, whoever you want… just make sure you give it a go.
