Raisins in cookies are just wrong. In fact, if I bite into a cookie that I think is a chocolate chip cookie and it is actually raisin, I am seriously so disappointed, that I may try and tactfully spit it out. I’ve said before that raisins being wrongly identified as chocolate chips in cookies would be the reason I have trust issues.
Raisins don’t belong in treats. Bottom line.
So anyways, I’ll get back to that in a moment.
On Friday I claimed I was done baking. After indulging all week I promised myself I was done. But then on Saturday, I had a moment of weakness (can I call it that?) and decided that I needed to make a homemade pizza from scratch. Do you like how I phrased that? “Needed to.” Not wanted, needed.
My mom use to make home made pizzas a lot when I was growing up. Friday nights were pizza nights. She would whip up the dough, and then let us four kids help “decorate” it. We were pretty boring little chefs though; our decorating basically consisted of sauce and grated cheese. Maybe the odd pepperoni stick would get sliced up and added, as well. But other than that, our “decorating” skills were pretty bland.
So, Saturday evening I decided I needed to do this. With wine in hand, and the iPod on shuffle, I found myself, again, in the kitchen. This time I had a helper. Mr Wonderful joined me and together we made something ahhhhmazing. I got to say, him and I were basically pizza making royalty. As for eating? Yup. No problem there. High five.
Then, Sunday rolled around and again I vowed, “Okay, NOW I’m done baking.”
But… apparently I am not good at keeping my word to myself.
For a reason a can’t explain, I wanted to do a batch of Cinnamon Oatmeal Raisin Cookie… but… with out the raisin. I’d substitute the raisins for chocolate chips. Hell yes. I can do that.
Except, if you don’t actually have chocolate chips.
I got to the part of adding the chocolaty little gaffers, and wouldn’t ya know… I have no chocolate chips! Sonnova…
Well then. Fine. No chocolate chips? We shall improvise.
Remember how I baked like a motha fawka last week? Well, lucky me, I had some M&Ms still, that would substitute nicely for the chocolate chips, which were suppose to substitute in for the raisins. Winner winner chicken dinner.
M&M cinnamon oatmeal cookies… not bad.
M&M Cinnamon Oatmeal Cookies
1/2 cup butter, at room temperature
1/2 cup sugar
1/2 cup brown sugar
3 teaspoons vanilla extract
1 1/4 cup all-purpose flour
3/4 cups rolled oats
1/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoons cinnamon
1 Cup M&Ms
*Preheat oven to 375.
*Beat butter and sugars with an electric mixer until smooth. Add egg and vanilla, mixing well until combined, about 2 minutes.
*Stir in flour, baking powder, salt, and cinnamon with the mixer on medium speed. Beat in oats. Mix until dough comes together.
*Fold in M&Ms. Refrigerate for 30 minutes.
*Remove dough from fridge and roll into big 1 1/2 inch balls. Set on a baking sheet about 2 inches apart. Bake for 9-11 minutes.
