As I promised to myself in my summer bucket list I stated that I was going to try healthy new recipes every week and then share them with you guys. Lucky you! That is, if you like food. But… if reading about food annoys you… well… see ya.
Anyways, while most gals my age were out with their friends on Friday night, getting shit faced and making out with random guys on the dance floor of some bar (oh how I don’t miss that scene at all…) I was at home. In zeeeee kitchen. Because that’s waaaaay cooler than any crowded, overpriced, puke-smelling club could ever be. I controlled the tunes, walked around barefoot, and got my own drink with out having to wait in line. Total win.
So anywhoooo… Friday night was pants off – dance off – cook off in the kitchen. Doesn’t that sound like a great time!?
Uhhh… hold your horses. Unfortunately (or fortunately?) I’m only kidding. I actually just liked the way that sounded. Pants off dance off. Hehe.
My pants stayed on,
And I didn’t really dance.
Unless you count maneuvering around two little dogs and two little nephews who were in and out of the kitchen wanting to help and snack as they waited.
“Aunty can I have a popsicle? I’m hungry Aunty. How much longer until supper Aunty?”
“Ummm…. 10 minutes. Go play for a few more minutes and then this will be done.” Total lie. SO that is what it felt like to be my parents when we were growing up. I just had an adult moment. Wow. I’m that old.
Ten minutes turned into, um… well, longer. But it all turned out in the end because dinner was served. High five self, high five. And it was total shhhwing worthy. Home made salmon burgers served with green beans, wine (…of course there was wine, don’t act surprised) and a strawberry angel food explosion for dessert.
So freaking good.
makes 4 burgers
1 pound fresh, raw salmon (skinless or skin removed)
1/3 cup panko breadcrumbs
2 tablespoons bbq sauce
1 tablespoon dijon mustard
2 tablespoons freshly grated parmesan cheese
2 garlic cloves, minced
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
4 whole wheat buns
Add salmon to the bowl of a food processor and pulse until it’s somewhat ground.
Remove and add salmon to a bowl with remaining ingredients (except for buns! Ha!) and mix with a spoon until just combined. Form into 4 equally-sized burgers. Heat on the BBQ (or skillet) over medium-high heat and cook burgers on each side until golden – about 3-4 minutes per side.
Serve with additional BBQ sauce, lettuce and red onion for topping.
