Southwestern Salad with Cilantro Jalapeno Vinaigerette

It’s hot out, right?

Like, super hot.

Okay… it’s not that bad. It’s actually pretty awesome. I love the heat.

And because the outside temps are so high/awesome, I’ve been refraining from solidifying my craziness by turning on the oven to bake. I mean, I want to bake. I just don’t think I should bake.

I’ve decided that instead of baking goodies, I could make, like,  a salad or something healthy that doesn’t require turning on the heat.

Truth be told, I eat salads every day. EVERY DAY. So, this wasn’t such a difficult decision for me. I genuinely enjoy my greens, I just like to have a little variety and liveliness to them, since I’m eating them all the time.

Enter THIS recipe, thanks to the Tina at mylifeasamrs.com. It’s got a bit of a kick to it and is basically just f’n delicious. If you want a meal that goes nicely with the rawesome temps outside, check this out.

Southwestern Salad with Cilantro Jalapeno Vinaigerette

For the Dressing:
1 cup cilantro
1/4 cup olive oil
1 lime, juiced
1 jalapeno, seeded and diced
1 clove garlic, grated
1/2 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon cracked black pepper

For the Salad:
2 bags Mixed Greens
15.25 ounce can of black beans, drained and rinsed
1-2 ears of corn, grilled or oven roasted and cut off the cob (I just used a can of corn… seemed easier.)
1 mango, peeled pitted and diced
1 cup cherry tomatoes, halved
2 scallions, diced
1/2 cup cilantro, chopped

directions:

For the Dressing:
Add all ingredients to a blender or food processor and pulse until combined. Refrigerate until ready to use.

For the Salad:
Add all ingredients to a large bowl and gently toss with salad dressing and serve. Great with grilled fish or even barbecue chicken on top. Additional mix in ideas: Avocado, goat cheese, etc…
