I’ve been eating like crap lately. I would just like to say.
Take out. Booze. Nachos. Bacon. Ugh. I’m so over it.
It’s not like I don’t eat good at all. Because I do! In fact, I usually eat great all week long. I eat properly, thinking about it as fuel for my next training session, or as a type of band-aid to help my hard working body repair quickly and happily.
But then, it’s like… the weekend hits. And all hell breaks loose.
The good news is, I think I have a fight coming up. Which means, the insanity has no choice but to stop. No more crap. It is kind of funny though, because THEN you will hear me complain about how much I hate eating clean, and how I’d kill for a plate of cheesy nachos. It never ends right? Always one thing or the other.
Anyways, I made some relatively “smarter choice” type muffins last week. Whole Wheat Banana and Blueberry Muffins. Sounds not bad, right? Well, I’d have to say they are pretty dang yummy. A good grab for breakfast on the go. So much better than Chocolate Cheerios or nacho chips. Not that THATS been my choices lately… but you know… just saying…
Whole Wheat Banana Blueberry Muffins
- 2 Cups whole wheat flour
- 1/3 Cup sugar
- 1 egg
- 1/2 Cup unsweetened applesauce
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla extract
- 4 ripe bananas, mashed
- 1/2 Cup blueberries
- Preheat oven to 350 degrees. Place muffin cups in muffin tins.
- Mix sugar, applesauce, and egg until creamy. Add bananas and vanilla. Add flour, baking soda, and salt. Stir until completely smooth. Fold in blueberries. Spoon the batter into the muffin tins. Top with course sugar.
- Bake for 20-25 minutes, until toothpick poked in center muffin comes out clean.
Bing, bang, boom. We’re back to eating smarter. 😉
